This years thyme and region is the Pacific Northwest region of the USA

 

When most people think of the Pacific Northwest, they think of rain.  Fair enough.  They do have a lot of it.  And around Thanksgiving, they’re sure to get doused on an almost daily basis. 

 

Unfortunately, all that precipitation has become part of a well-watered regional stereotype that reduces the area to a patch of rain-soaked rusticity with an ocean-view.

 

Forget the stereotype.  Visitors who spend time in and around Seattle or Portland see not only wool plaid but also designer silk and satin, not just fir trees but also fields of Chardonnay vines.  And they soon discover that the rain does more than just muddy work boots – it serves as a romantic backdrop for find cooking and dining.

 

The elegance is unexpected, but it shouldn’t be.  And especially not when it comes to food, because the local larder has sophistication written all over it.  And so, I like to think, does this Thanksgiving menu.  It includes many of region’s best-loved ingredients – wild mushrooms, pears, onions, and cherries among them – and even a cranberry sauce made special by the addition of Oregon Pinot Noir.  It’s a stylish feast full of the true taste of the Northwest.
